Sea Salt Brownies (Sort Of)

My kitchen skills have vastly improved in the last year. But for some reason I just cannot find a groove with baking.

Yes, I’ve had one or two successes. The blueberry cheesecake muffins I made in July were quite tasty. Mike will agree with me though when I say that most of my other baking endeavors have fallen flat (or dry, or undercooked, or just plain weird).

Still, recipes like “Classic fudgy salted brownies” courtesy of Running to the Kitchen, one of my absolute favorite blogs, catch my eye and I vow to go to the gym more just so that I can enjoy the decadent yumminess of the dessert. We had absolutely nothing to do on Sunday so I decided to sneak in some baking between meal-prep for the week.

The result? Well, they taste pretty good (my voice goes high when I say “pretty”). Yet somehow I managed to make them so thin that they are more of a cookie. I also got over zealous with the sea salt topping. Put it this way. When I took them out of the oven, Mike laughed.

Gina at Running to the Kitchen is a MUCH better photographer than me, but seriously, go look at her brownies and tell me what I might have done wrong. Mike helped me “retrace” all of my steps in the kitchen and we’re stumped. He even offered to bake them again next weekend to try and figure it out.

  • Pesto is really growing on me, and this Citrus Pea Pesto recipe from Running to the Kitchen sounds so interesting. I think I’ll try it soon
  • Have you ever made homemade donuts? I bet the answer is ‘no’ but these Apple Spiced Glazed Donuts courtesy of A Little Bit of Lovely made my mouth water
  • The Halloween Cocktail Guide from Fashionably Bombed gave me a hangover just reading it, but I simply adore their creativity and obsession with booze. If I had to choose one recipe, I think I’d go all the way and make the Boozy Pumpkin Milkshake if we were throwing a Halloween party
  • I must agree with Shopping’s My Cardio, Gemma Redux is simply fab

And last but not least, Hip Hip Gin Gin has me drooling over the dainty Diamond Leaf Bracelet by Scosha. At $159 the piece is by no means cheap, but it is versatile and classic. I really love (and covet) it.

Crushing on Sam

I’ve loved Sam Edelman’s shoes off and on for years. My favorite pair of booties are a fashion-forward peep toe pair that I treated myself to three or four years ago. They are still a staple in my closet every fall.

Yesterday I was at the mall despite my self-imposed frivolous spending freeze. Sadly I had to visit the Apple store (I shattered my iPhone screen on Tuesday. Managed to only pay for a new screen and avoid the impulse 4S buy. I really want Verizon come January). I found myself with time to kill (dangerous) and visited my favorite place…the Nordstrom shoe department.

I mean, how do you not want to walk by, touch, hold and gawk over shoes like this?

The Scarlett pump is a crazy awesome mix of sweet and sassy. The blue is rich and would match perfectly with black or gray. The black sparkles and spikes give the shoe an edge that offers an unexpected punch to any mundane fall or winter outfit. I do realize that the heel is quite high and is not made for walking on icy sidewalks. Luckily snow melts fast in Denver so I’d probably be ok.

On the other hand, the Wilma Bootie is destined to be a go-to shoe. Paired with tights or under jeans, the sky is the limit October thru March.

“So, did she buy the beautiful shoes,” you may ask? Nope. I left the shoes where I was supposed to. Resting on their little display table, waiting for a gal who didn’t just review every penny of her entire budget and decide that there are bigger, more important things to be buying–like hopefully a home of our own one day.

Oh yeah, we’re “starting” to look at houses. We are not in the position to buy just yet but I know it is a complex process and I actually have no clue what my must-have’s are versus all the things I will have to comprise on given our price range. It is such an exciting prospect though–and just the thought that we MAY be able to buy something in the next year has already curbed my shopping habit (a bit).

Munchies: Kale Chips

This week we received a large bunch of kale from Door to Door Organics. I was excited to try something new with our kale (recently we have just sauteed it with shrimp or chicken) and thought about making a soup. Sadly, I was missing a few ingredients to whip up soup on a whim so I decided to make a batch of kale chips instead.

Trim, tear, drizzle with olive oil and bake for 12 minutes at 350 degrees. Season with salt. It doesn’t get much easier or healthier than that!

Sunday Brunch

Sunday brunch is such a wonderful concept. Essentially you get to sleep in, eat a filling and indulgent meal with friends or family around noon, hopefully enjoy a little alcohol, and for a moment forget about the upcoming responsibilities of Monday.

I. LOVE. BRUNCH.

This past Sunday Mike and I were excited for my parents to visit us in Denver for the day. They live in Los Angeles but come to Colorado as often as they can to stay at their condo in Breckenridge. Rather than meet them in the mountains this time, they agreed to spend the day at our house.

My mom’s only request? That we make waffles because she reads about all the cooking we do here on my blog. Little did she know that I was on a mission to prepare more than just waffles. Despite a few frustrating moments — I can get a little stressed in the kitchen when preparing multiple items — our homemade Sunday brunch was a success. Let’s just say that Mike was a huge help.

We served a citrus salad from our Giada at Home cookbook, creamy eggs with arugula pesto from The Newlyweds’ Cookbook and waffles using an Arrowhead Mills multigrain waffle mix. As a side note, we would have made our favorite homemade waffles recipe, but I thought that would really get my blood pressure going and I wanted to be in a good mood for everyone.

Citrus Salad

  • 2 large oranges
  • 2 grapefruits
  • 1 large or 2 small fennel bulbs, trimmed and thinly sliced
  • 1/2 cup olive oil
  • 1/4 cup fresh basil leaves
  • Salt and pepper
  • 1/3 cup chopped walnuts, toasted

Peel and trim ends from oranges and grapefruits. Place a sieve over a medium bowl. Hold an orange over the bowl and using a pairing knife cut along the membrane on both sides. Let all of the trimmings fall into the sieve. Repeat with all citrus fruits. Squeeze the membranes over the bowl to extract as much juice as possible, reserving the juices. Place the peeled citrus and fennel in a serving bowl.

In a blender or the bowl of a small food processor (we used an immersion blender), blend together the oil, basil and three tablespoons of the reserved juice until smooth. Season with salt and pepper. Pour over the fruit and fennel. Add the chopped walnuts and toss until all the citrus is coated.

Arugula Pesto

  • 2 oz. arugula
  • 2 tablespoons chopped fresh basil leaves
  • 2 tablespoons blanched almonds, chopped
  • 1/3 cup extra virgin olive oil
  • 1 garlic clove, chopped
  • 2 tablespoons freshly grated Parmesan cheese

Chop the arugula coarsely then transfer to a food processor. Add basil, almonds, oil, garlic, and salt and pepper to taste. Puree briefly to form a vivid green paste. Transfer to a bowl, stir in cheese, and spoon over your favorite scrambled eggs. Bonus–reserve leftover pesto and enjoy later in the week with freshly cooked whole wheat pasta.

Backyard Cleanup Update

A few of my regular readers have asked about our backyard and if we were able to tackle the mess we set out to fix in July. In case you need a refresher, “Better Late Than Never” has some cringe worthy photos from the post-wedding disaster back there.

The process took much longer than expected but just in time for the first snow that is being forecast for Wednesday, we’re basically done. Hooray!

Despite the fallen leaves (a daily battle in fall) I am so grateful of all the hard work Mike put into the yard. We are no longer “those white trash neighbors,” or so I hope.

The stone patio turned out beautifully and gives us a nice amount of extra, walkable space for entertaining and eating. The mulch throughout most of the yard was a cheap and easy way to give some continuity to the space and will hopefully limit the number of places that Kona can dig. Finally, Mike rearranged all of the stepping stones to make it infinitely easier to walk through the back to our cars. A “must” for when I am in heels.

This project makes me so excited for the day we own a house and we can tackle home improvement projects together. Though Mike may argue that I am better at nagging about projects than actually getting my hands dirty. I’ll need to work on that!

I’m not sure what it is about fall, but the blogs I adore have gotten even more lovely thanks to cozy ensembles and hearty recipes. All week I found myself reaching for my wallet (but exercised restraint) and adding to my grocery list after being inspired by so many great posts.

  • Wedding Wednesday “Magic Moments” is an Apartment34 post that made me smile and think back to our wedding day earlier this year. I took solo photos in front of a full length mirror and they are some of my absolute favorite from the day
  • The Culinary Couple recently welcomed a beautiful baby boy to their family and I’ve been hanging on every word and picture of his birth story. He is precious and I can’t wait to watch how their blog evolves with a little one to cook for at home
  • Sequins & Stripes treats herself to “A Few Purchases for Europe” and I am obsessing over her Melissa Logo Frye Boots
  • I rarely ever buy flowers for a table but Camille Styles has me itching to create a vegetable inspired centerpiece using bright cabbages, brussel sprouts and onions. I love how different and unexpected it feels
  • Try saying chicken sausage enchilada spaghetti squash ten times fast. I can’t, but I sure want to try Running to the Kitchen’s recipe for it ASAP regardless

Meet Birchbox

Have you heard of Birchbox? I hadn’t either until my aunt told me she signed up a few months ago. According to the website, Birchbox delivers four to five beauty product samples to your doorstep monthly for just $10. The skincare and makeup samples are from some pretty well-known brands, including Benefit, Erno Laszlo, Kiehl’s and many more.

My aunt was kind enough to save a few goodies for me from her latest shipment and sent them from California to Colorado. What a treat to have them arrive for the weekend!

The goodies she saved and sent were Befine Lip Exfoliator, Blinc Mascara and Redken Shine Flash. Her package also included Pangea Organics Facial Scrub and Tea Forte Minteas.

Everything about the shipment is adorable. The box, the presentation and the little card that provides an explanation of the products and teases what more is available online at Birchbox.com–perfection. I also love the Birchbox blog.

I’m trying to limit unnecessary expenses but I could really get used to monthly Birchbox shipments.

Covet: Kate Spade Everything

Kate Spade’s fall collection seems to be everywhere across the fashion blogosphere. I’ve actually only ever made one Kate Spade purchase–a pair of white aviator style sunglasses from the Nordstrom anniversary sale three or four years ago–so I am not too familiar with her line.

All it took was a quick spin around the website and I had a “covet” list that is a mile long. What really stands out are the bold colors that transform otherwise basic pieces into eye-catching statements that can be worn through fall, winter and spring with some creative layering (and un-layering) techniques.

If I could magically own just one item I think I’d choose the Catarina blouse. Tie-bow blouses are a major trend this fall and I love that they can be paired with dress pants for work and dark skinny jeans with tall boots for a casual night out. Come spring this blouse would still look fantastic with peep toe flats as well.

I am going to exercise restraint, but I am not happy about it.

P.S. I really, REALLY want the clutch too.
