For all you Martha Stewart-types out there, making a stuffed pepper isn’t that big of a deal. I get it. But I am still finding my way around a kitchen so having my first stuffed peppers recipe turn out delicious and pretty is quite exciting.
I found the recipe while finalizing our biweekly order from Door to Door Organics. What caught my eye is the use of MM Local products. MM Local is a unique company and the products I have tried are extremely delicious and obviously of very high quality. Below is an excerpt I love from the MM Local website:

A few subtle shifts were made to the Door to Door recipe. I used perhaps one too many scoops of the peppers, so be careful with those. Also, because I was shopping for multiple recipes this week I chose to incorporate feta cheese into the quinoa mixture. It melted nicely and helped to balance the peppers. Finally, I skipped the mushrooms because, well, we hate mushrooms in the Anderson household!

I love stuffed peppers, and these sound pretty delish! My stuffed pepper recipe (from my mom) is an easy go-to: peppers (red, green, yellow – whatever!); italian sausage (I usually do chicken or turkey); rice (we like brown); and jarred spaghetti sauce. Brown the sausage & cook the rice, combine, stuff into your peppers and cover w/sauce. Bake in the oven (not long – 30-45ish?) and voila – dinner! Huge hit, always.
