No matter how healthy we eat or how much I exercise, I refuse to give up sweets. And by sweets I don’t mean a juicy apple after dinner. I. Need. Chocolate. But I’m open to trying “healthier” desserts (let’s face it, dessert is still not great for you) and was eager to try a flourless recipe. Since I don’t have a 9X9 pan that the recipe called for I made cupcakes instead. The verdict? We have a winner!
Flourless Chocolate Zucchini Cupcakes (adapted from Delighted Momma)
1 cup of almond butter
1 1/2 cup of grated zucchini
1/3 cup of raw honey
1 tsp of vanilla
1 tsp of baking soda
1 tsp of cinnamon
1/2 tsp of nutmeg
1 cup of dark chocolate chips
Preheat oven to 350 degrees
Combine all the ingredients into a large bowl and mix everything together
Pour into a greased 9×9 baking pan (or lined cupcake tins)
Bake for 35-45 minutes, or until a toothpick comes out clean
