Decadent Red Velvet Cake

Red Velvet cake “filled” with cheesecake pudding and topped with Cool Whip and Oreos. This isn’t something I make everyday. In fact, I rarely bake because I refuse to have such temptations in our house. But this past weekend we hosted friends in Breckenridge and I felt the need to serve something sweet and special.

I turned to my “Have Kitchen, Will Cook” Pinterest board to choose a recipe, and Red Velvet Poke Cake via The Country Cook practically jumped out of my screen. Semi-homemade baking appeals to me and this could not have been any easier. It was devoured by everyone in mere moments of it hitting dessert plates.

Halloween Cupcakes

On Saturday night we had a small group of friends over for Halloween before heading out to a concert. Costumes were worn and drinks were consumed. It was a blast. The slow cooker ravioli I made was a huge hit. To the sauce I also added red chili flakes and oregano. You almost couldn’t tell the sauce was out of a jar. I think the dish will be repeated many times throughout ski season.

But let’s talk dessert…

Yes, I made these Candy Corn Cupcakes with cream cheese frosting. From scratch. No box. One guest called them a “concentrated bite of Halloween.” Assuming it was a compliment, I was thrilled. I consistently have a LOT of baking disasters so every time something turns out correctly, I am pretty damn proud of myself. Halloween isn’t until Wednesday so check out this Candy Corn Cupcake recipe and make them for the big night!

Pineapple Upside Down Cupcakes

One fall-like day last week is all it took to get me into baking mode. It quickly climbed back up into the high 80′s here in Denver but my oven and Kitchen-Aid are getting a workout regardless. Months ago I pinned a picture of mini pineapple upside down cakes and decided to give them a try on Friday night after a marathon cleaning session. Let’s just say I have a hard time sitting down sometimes.

I only have a cupcake pan so I had to adjust a few things, including having to cut and maneuver the pineapple slices for the top to make everything fit.

Because I am not a great baker I gravitate toward semi-homemade recipes. Using a yellow cake mix as the base and then making it “special” with pureed pineapple instead of oil and milk instead of water added more depth of flavor. I served the cupcakes on Saturday night to a group of friends we had over for dinner and they were a hit!

Recipe from Star Confections Blog

Topping:

  • Equal parts brown sugar and butter (about 1/4 cup each)
  • Pineapple slices
  • Maraschino cherry for tops

Cake Batter:

  • Yellow cake mix
  • Pureed pineapple in lieu of oil
  • Milk in lieu of water

Pre-heat the oven to 350 degrees. Prepare the topping by stirring brown sugar into melted butter until it makes a runny paste. Don’t be stingy! Spoon the mixture into mini cake or regular cupcake cups in a tin that has been greased or sprayed with cooking spray. Arrange pineapple and leave room for a cherry at the end.

Mix the cake accordingly to the box instructions, substituting the oil and water as noted above. Spoon into the cups and bake for 15 – 20 minutes. Let the cakes cool for about 10 minutes before flipping them out onto a tray or cookie sheet. Top with a cherry and pat yourself on the back for a job well done!

 

Friday’s Pin of the Week: Sweets

Are cupcakes be beautiful? I say yes!

I found these Rose & Vanilla cupcakes on the the Williams-Sonoma food blog and haven’t been able to stop thinking about making these for Easter. Given the fact that I seem to be mastering the art of cupcakes, I just might give these a whirl.

Semi-Homemade Peanut Butter and Chocolate Cupcakes

Confession. I am a bad blogger who forgot to take pictures of the cupcakes I made for Mike’s 30th birthday party. In the moments leading up to everyone descending upon our house, snapping a few photos never entered into my mind. Sad.

What is not sad is how the cupcakes were devoured by all in attendance. Luckily, I was able to send a few leftover strays home with my two girlfriends who are expecting, because every pregnant woman should be allowed to enjoy Chocolate Peanut Butter Cup Cupcakes via the brilliant Our Best Bites site.

I found the recipe by doing a Google search for “semi homemade chocolate and peanut butter cupcakes.” Don’t you just love Google? Mike is a fan of all sweets, but peanut butter – in addition to cheesecake – rank top on his list. The best part of the recipe? The peanut butter frosting. Mike actually “yelled” at me when I threw away the leftover pastry bag of frosting, as I later found out he was piping it onto leftover Costco cookies. Wow. That boy loves sweets.

Pin of the Week: Have Your Cake

A very special man in my life has a BIG birthday coming up at this end of this month. I plan to strap on my apron and reverse my baking curse. I should go small with cupcakes or brownies, but a 30th birthday calls for a cake. A big cake. Maybe this cake?

Marmalade Muffins with Pistachios and Ginger

Two weeks ago I posted that my weekend aspirations included baking muffins. I had 100% of the ingredients, sans time. Fast forward to this past Saturday and I finally found myself with a spare hour. Rather than (gasp) sit down to rest for 60 minutes, I decided to bake.

I am super glad that I decided not to be a couch potato. These babies are so delicious and made our kitchen smell amazing. The orange marmalade I had on hand included ginger, which gave my version of these muffins a bit of a bite. I also had enough pistachios on hand to mix them in the batter and sprinkle on top. I love the crunch that they added.

I may have figured out my way around a stove but the oven and me are still not great friends. I need to get back into baking and this colorful bundt cake may just be what inspires me to get going again.

Weekend Aspirations

This is Kona. He is one content pup today. Why? Well, it’s probably because Mike and I decided to skip the mountains this weekend to focus on house projects, homework (Mike), work (me) and a host of other to-do’s that have been neglected recently. Aren’t we so grown up!? This also means that Kona will be right by our side 24/7, the preferred place for Kona on any given day.

If I can stay motivated — which is going to be hard because it is cold, snowy and I just kind of want to watch movies — I hope to get quite a bit accomplished, including…

  • Attempting to bake homemade muffins, such as these Orange Marmalade beauties
  • Making a batch of freezable veggie burgers so that I have an easy dinner option when I get home late from work or the gym next week
  • Stopping by LuLu’s to see if they have any cool old phones (that aren’t a fortune) for our office. We just want one to display as our office still has the original wooden built-in from the 1920′s for a phone
  • Heading out to Anthropologie and a few other places to shop for upcoming birthday presents
  • Visiting our local Benjamin Moore store at least once to pick up primer, paint and all the necessary equipment to finally start painting our basement guest bedroom! Mike has been working on re-texturing the walls for a few weeks and they look beautiful
  • Enjoying cocktails with our dear friends who are visiting from San Diego to plan their Colorado wedding. It feels like a Forest Room 5 kind of evening

Resurfacing

I haven’t blogged in a week and to be honest, I haven’t had a second to miss it until today. Unpacking our new home has been overwhelming and just when I started to see the light at the end of the boxes, Christmas happened. We enjoyed two wonderful days just up the road in Niwot with Mike’s family. Our holiday was filled with tons of food, laughs and love.

Yesterday (the day after Christmas) we came to Breckenridge with friends visiting from San Diego. I fought off an impending cold by skiing all day yesterday, but finally lost the battle today and am catching up on blogs from the warmth of our condo to avoid being sick for my entire vacation. Have I mentioned that my office is closed until Jan. 3? Amazing!

We have been really bad about taking pictures since the move so definitely look at Mike’s sister’s blog, Block Party, to check out the cuties who made our Christmas day unforgettable. Hopefully Kelly will also post better pictures of the delicious breakfast she and I prepared below — Overnight Blueberry French Toast. This picture is just from my “dying” 3G iPhone.

The prep on Christmas Eve was so simple and the result was well worth the calories. I think any breakfast item that can be prepped for a large group the night before is genius. It keeps the hosts hosting rather than cooking all morning.

I am eager to get back to blogging (our Internet at the new house is finally working) and start documenting “before” and “after” photos of our progress.
